These Toll House Coconut Chocolate Chip S’Mores were the perfect addition to our sunny afternoon! We had a good school day and after the stress that we’ve been having with school the last couple weeks, we needed to celebrate! My oldest daughter loves baking, so she jumped right in to help me decide what to bake. I love spending time baking with my girls, not just because it means we’ll have something amazing to eat, but because it gives us time to chat without the stress of ‘life’.
We live in an RV right now and my kitchen space is horribly limited, so I love using Nestlé Toll House ready-made dough as a base for our recipes. It really saves on the mess which means that I can focus on more important things…like eating these yummy cookies!
Ingredients for Coconut Chocolate Chip S’Mores:
Nestlé Toll House Ultimates Chocolate Chip Lovers dough
24 large marshmallows
1/2 cup shredded coconut
1/4 cup water, for dipping
The Ultimates Chocolate Chip Lovers cookie dough is intended to make 12 big cookies. Since big cookies are a bit much for little hands to hold, I cut each pre-made cookie section into four smaller sections. They turned out the perfect size!
I put the cookies in the oven to bake at 350˚F for about 9 minutes (please note: because I have a tiny, unpredictable oven, it’s really best if you begin checking your cookies at about 7 minutes.)
While the cookies were in the oven, Emma and I prepared the marshmallows. The large marshmallows were the perfect diameter for the small cookies, but we thought they would be too tall, so we cut them in half.
We dipped each marshmallow into the water and then pressed coconut onto them. The coconut had a hard time sticking, but if you are very gentle you can get it to stay on long enough to get it in the oven. (Which is all it needs.)
Once our tiny cookies had baked, we flipped half of them upside down on the cookie sheet.
If you do this while the cookies are still warm, you can press them onto the pan to make them a little more flat. If not, no biggie.
Then, we put one marshmallow on top of each cookie.
And topped with a second cookie.
Very carefully, place the tray back into the oven for about 5 minutes. You want the marshmallows to become soft, but not brown.
Remove the cookies from the oven for the second time and gently press down on the top cookie, squishing the marshmallows and coconut between the two cookies just like a S’mores.
Restrain yourself for a couple minutes….
Devour the cookies once they are cool enough to not burn you!
