It’s taken awhile to find delicious go-to soup recipes that my crew will eat without protest, but this 15-minute Taco Soup was a complete no-brainer!
It takes 15 minutes to whip up and the result is a flavourful and creamy soup that is loaded with vegetables – a fact the kids have yet to mention. This is the only way I can get some of my kids to eat beans or tomatoes, which is fine by me because this kid-friendly soup is one of my favourites, too.
Ingredients to Make a Creamy Taco Soup
You will need:
1-16oz carton broth (chicken or vegetable)
1 Tablespoon olive oil
3 garlic cloves, minced
1 onion, chopped
1 cup salsa or chopped tomatoes with juice
1 cup corn
1 cup mixed beans
2 cups shredded chicken, optional
1/2 cup sour cream, plus more for garnish
1/2 cup shredded cheese, plus more for garnish
Salt and pepper, to taste
1 teaspoon cumin, optional
Chopped cilantro, optional garnish

Place the olive oil in a large stock pot over medium heat.
Add the onion and garlic and sautee for 2-3 minutes until the onion is translucent and garlic is fragrant.
Add the chicken stock, tomatoes, corn, beans and chicken and cover.
Continue to cook for 10 minutes, stirring occasionally.
Remove the lid and add your seasoning, tasting as you go.
Stir in the sour cream and cheese to achieve a creamy texture.
Serve garnished with a sprinkle of cheese, a dollop of salsa and sour cream, and a sprinkle of cilantro, as desired.
